Red Bean and Lotus Seed Dessert

This coming Chinese New Year, your celebration will not be complete if you don't get really this wonderful dessert to serve your guess. Try it out!!

Ingredients

200g red bean, scald in hot water, drain

3 bowls water

1 piece mandarin orange peel

1 tbsp Glutinous rice

50g lotus seed, soak overnight

80g sugar and 120ml water (cook together to make syrup)

Method

1. Put red beans, water, orange peel and glutinous rice onto a pressure cooker. Cook it at full pressure for 30 minutes. Leave mixture to cool and then blend it till smooth in a blender.

2. Cook lotus seeds in boiling water until soft but not broken. It takes around 25 minutes. Drain.

3. Put together sugar syrup and the lotus seed with the blended red bean. Mix well.

4. Serve hot or cold.

Note: If not using pressure cooker, soak red beans overnight and cook with six bowls of water and mandarin orange peel.
